Oxygen is what makes things go stale. It reacts with the fragile oils and compounds in coffee and tea, destroying the delicate flavors and aromas you worked so hard to create. This process is called oxidation. Nitrogen flushing is a simple but brilliant solution. Just before the outer bag is finally sealed, a small nozzle injects a puff of food-grade nitrogen gas.
